cups basil leaves, stems removed (press firmly into measuring cup to measure) If you're buying the basil, this is equal to one large bunch
large cloves garlic, peeled and smashed
tbsp. pine nuts (lightly toast in a skillet or oven)
cup grated Parmesan
Wash basil and pat dry. Put basil, garlic, pine nuts, parmesan, oil and salt in food processor. Pulse to desired consistency. Taste and add more salt if necessary. If you're using this for bruschetta, it may not need as much salt as it does when its on pasta. You can refrigerate this for a week or two or freeze for longer.
