Peach Upside Down Cake
- 1 cup all purpose flour
- 1/3 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 tablespoon butter (melted)
- 2 cups sliced peaches (fresh or canned)
- 1/2 cup brown sugar
- Cinnamon to taste
- Juice and ground rine of one lemon
- 1 Tablespoon flour
- 3 tablespoons melted butter
Preheat oven to 425 degrees
Grease 8 inch deep dish pie plate.
cover bottom with peaches.
Sprinkle peaches with brown sugar, cinnamon, lemon juice and rind.
Sprinkle 1 tablespoon of flour.
Stir gently to mix.
Pour melted butter over the mixture.
Mix flour, sugar, baking powder and salt.
In a separate bowl mix the egg yolks, milk and melted butter together until combined.
Add liquid mixture to flour mixture.
Beat until blended.
If batter is too dry, add a little milk so that it can be poured.
Pour batter evenly over peaches.
Bake for 30 minutes.
Reverse out of pan and allow to cool slightly before serving.
