Skinny Veggie Pizza

Ingredients

  • 4 flour tortillas
  • 4 c. baby spinach
  • 1 medium red pepper
  • 1 medium zucchini
  • 2 tsp. minced garlic
  • 2 tsp. olive oil
  • salt
  • black pepper
  • 3/4 c. marinara sauce
  • 4 oz. goat cheese
  • 1/4 c. finely grated Parmesan cheese
  • 1/4 c. fresh basil leaves

Preparation

Step 1

Arrange oven racks in top and bottom thirds of oven. Preheat oven to 475 degrees F. Spray 2 large cookie sheets with nonstick cooking spray; place 2 tortillas on each.

In large bowl, toss vegetables, garlic, oil, and 1/2 teaspoon each salt and black pepper until coated. Microwave on high 2 minutes, stirring once. Drain, if necessary. Spread sauce on tortillas. Top with vegetables and cheeses.

Bake 12 minutes or until tortillas are crisp around edges, switching racks halfway. Top with basil.
