- 6 medium potatoes (around 2 lbs.)
- 1/4 cup margarine or butter
- 1 medium onion (1/2 cup)
- 1 tbls. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 cups milk
- 2 cups (8 ounces) shredded cheddar cheese
- 1/4 cup dry bread crumbs
Heat oven to 375.
Cut potatoes into thin slices to measure 4 cups. Heat butter in pot over medium heat. Cook onion in butter about 2 minutes stirring occasionally. Stir in flour, salt and pepper. Cook stirring constantly until bubbly; remove from heat. Stir in milk and 1 1/2 cups cheese. Heat to boiling, stirring constantly. Boil and stir one minute.
Spread potatoes in ungreased 1 1/2 quart casserole dish Pour cheese sauce over potatoes.
Bake uncovered 1 hour.
Mix remaining cheese and bread crumbs. Sprinkle over potatoes, sprinkle with paprika. Bake 15-20 minutes.
