Ingredients

  • ½

    cup onion, diced

  • 2

    cloves garlic, diced

  • 2

    eggs + 1 yolk, beaten erf! 3 eggs!

    pounds ground round

    # Jimmy Dean Original Sausage sausage/spicy is good, too!

    C Italian Bread Crumbs

  • 1

    cup buttermilk

  • 1

    T Worcestershire sauce

  • 1

    T horseradish

  • 1

    T catsup

  • 1

    t salt

  • ½

    t pepper / red chili flakes?

  • ½

    t dry mustard

  • ½

    t sage, celery salt

  • ½

    t garlic salt

  • ¼

    c parmesan cheese

  • 8

    oz. tomato sauce

Directions

sauté the onions for about 8 minutes. Transfer to bowl. Sauté the garlic for about 30 seconds. Transfer to bowl. Beat eggs well and transfer to bowl. Turn on broiler to high and put the shelf at center of oven. Add the rest of the ingredients and squish it into mush. Line a cookie sheet with foil. Cover a cooling rack with foil and spray with Pam. Place the wad of meat in the center and paddycake it into a 5x9” loaf. Place the cooling rack on the cookie sheet and slide under broiler and cook for 4 minutes. Turn pan 180° and cook for 4 minutes. Turn off the broiler and bake at 350° until the meat loaf registers 160°, 40-45 minutes. Transfer to the cutting board and cover with foil and let rest 20 minutes. Slice and serve. Wrap in Stretch Tight and refrigerate. When Cold, slice and freeze the slices. Vacuum pack and return to freezer.
