Ingredients

  • 1 1/4

    cups firmly packed brown sugar

  • 1/3

    cup vegetable oil

  • 1/2

    teaspoon almond extract

  • 2

    large egg whites

  • 1

    cups all-purpose flour

  • 2

    teaspoons baking powder

  • 1

    teaspoon ground cinnamon

  • 1/2

    teaspoon ground nutmeg

  • 1/4

    teaspoon salt

  • 1/4

    teaspoon ground cloves

  • 1 1/4

    cups diced pear

  • 1/4

    cup dried currants

  • Cooking spray

Directions

Preheat oven to 350º. Combine first 5 ingredients in a bowl; beat at low speed of a mixer until well-blended. Combine flour and next 5 ingredients (flour through cloves); stir well. Gradually add flour mixture to brown sugar mixture; beat just until blended. Stir in pear and currants. Pour batter into a 9-inch square baking pan coated with cooking spray. Bake at 350º for 40 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes on a wire rack.
