STUFFED PEPPER SOUP

Ingredients

  • 1 lb. of ground beef
  • 1 can (680ml) Tomato Sauce + 1 can of water
  • 3/4 cup ketchup
  • 1 can (28oz) crushed tomatoes
  • 2 cups of chopped peppers (I like to use a variety red/orange/yellow/green)
  • 2 tablespoons beef soup base dissolved in 2 cups of hot water
  • 1/4 cup of brown sugar
  • 1 bay leaf

Preparation

Step 1

Brown ground beef and drain off fat. Add all ingredients. Season to taste with: salt, pepper, basil, oregano, rosemary, celery seeds, salted
herbs, etc.
Bring to a boil and add:
¾ cup uncooked rice (Uncle Ben)
Reduce heat to simmer and cook until rice is cooked (30 minutes)
