Roasted Tomato-Garlic Sauce

Ingredients

  • 1 cup chopped onion
  • 1 tablespoon vegetable oil
  • 25 garlic cloves peeled (about 3 heads)
  • 5 large red tomatoes (about 3 pounds) each cut into 8 wedges
  • 1/2 cup water
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt

Step 1

Preheat oven to 450º.

Combine first 4 ingredients in a 13 × 9-inch baking dish. Bake at 450º for 20 minutes.

Combine tomato mixture, water, vinegar, and salt in a large saucepan; bring to a boil. Cook over high heat 10 minutes. Place mixture in a blender or food processor; process until desired consistency.

Serving Size: 1/2 cup
