Turnip Winter Slaw With Mango, Celery & Ginger

Ingredients

  • 6 medium purple-top turnips (about 2 pounds), peeled, trimmed and cut into matchsticks
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 cup rice wine vinegar
  • 1 teaspoon dark brown sugar
  • 4 tablespoons freshly grated ginger
  • Few drops Sriracha or other hot sauce
  • 2 tablespoons neutral oil, such as grapeseed
  • 2 teaspoons toasted sesame oil
  • 2 cups thinly sliced celery
  • 1 large hard-ripe mango, peeled and cut into matchsticks, or 1 cup dried apricots, very thinly sliced
  • 1/3 cup thinly sliced whole scallions
  • 3/4 cup chopped fresh cilantro

Preparation

Step 1

In a bowl, toss turnips with 1 teaspoon salt. Let sit 15-20 minutes, stirring occasionally. Rinse in cold water, then drain and wring dry in a kitchen towel.

Meanwhile, make dressing: Whisk together vinegar, sugar, ginger, hot sauce and oils. Set aside.

In a large bowl, toss turnips, celery and mangoes with dressing. Add scallions and cilantro, then toss once more.

Cover and chill at least 1 hour before serving. Adjust seasoning as needed and serve.
