Dinner in a squash
This is a fun twist to a typical dinner in a pumpkin. Acorn squash is a good choice because everyone can have their own or if need they can cut it in half.
- 3 large acorn squash
- 1 pound ground beef
- 1/2 cup celery, chopped
- 1 small green pepper, chopped
- 1 small onion, chopped
- 1/2 cup soy sauce
- 2 Tbsp brown sugar
- 1 (4 ounce) can sliced mushrooms
- 1 (10-3/4 oz) can condensed cream of chicken soup
- 2 cups cooked rice
Preparation time 30mins
Cooking time 60mins
Preheat oven to 375 degrees F. Wash squash well; cut off top and remove seeds. In a large skillet cook the beef, celery, green pepper, and onion until meat is browned and vegetables are tender; drain. Add all remaining ingredients and cook an additional 3 minutes, mixing well. Spoon filling into prepared squash and place them on a cookie sheet. Bake for 1 hour.
