Ingredients
- 2 cans white albacore tuna packed in water, drained (12oz each)
- 1/2 cup diced sweet piquante peppers (such as Peppadews)
- 1/4 cup minced red onion
- 2 Tbsp chopped fresh parsley
- 2/3 cup canola oil mayonnaise
- 2 Tbsp fresh lemon juice
- 1 Tbsp Old Bay seasoning
- Salt and pepper to taste
- Sliced baguette
- Sliced provolone cheese
- Shredded romaine lettuce
- Purchases Italian dresssing
Preparation
Step 1
Combine tuna, piquante peppers, red onion, and parsley.
Whisk together mayonnaise, lemon juice, and Old Bay; stir into tuna mixture and season with salt and pepper.
For the tuna melt, preheat broiler to high with rack 6 inches from element. Toast baguette, cut side up, on a baking sheet until golden, 1 minute. Top with provolone, broil until it melts, 1-2 minutes. Spread tuna on provolone and broil until heated through, 2-3 minutes. Top tuna with romaine and drizzle with dressing.
