Savory Red Pepper-Cornmeal Scones

Ingredients

  • 2/3 cup all-purpose flour
  • 1/3 cup yellow cornmeal
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 tablespoons chilled stick margarine cut into small pieces
  • 1/3 cup diced red bell pepper
  • 1/3 cup fat-free buttermilk
  • Cooking spray

Preparation

Step 1

Preheat oven to 400º.

Combine first 7 ingredients in a bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal. Add bell pepper and buttermilk; stir just until moist.

Pat dough into a 6-inch circle on a baking sheet coated with cooking spray, and cut into 4 wedges. Bake at 400º for 20 minutes or until golden. Serve warm.
