Spanish Chicken

Ingredients

  • 1 large stewing hen (3 - 4 lbs. dressed)
  • 3 Onions
  • 1/4 Cup shortening
  • 1 Green pepper
  • 1 Pimiento
  • 3 Teaspoons chili powder
  • 1/2 Teaspoon caraway seeds (Optional)
  • Salt
  • Pepper
  • 1 1/2 Cups canned tomatoes
  • 3 tablespoons flour
  • 1 Cup sour cream

Preparation

Step 1

Cut chicken into sections.
Place chicken in roaster.
Brown onion slices in shortening; add diced green pepper, pimiento and heap over chicken.
Sprinkle with chili powder, caraway seeds, salt and pepper.
Cover chicken with tomatoes, bake at 350 degrees until tender (about 30 minutes per pound).
Remove chicken.
Thicken gravy with flower mixed with water or milk and add sour cream.
Mix well and serve hot.
