Cucumbers in Sour Cream

  • 3 medium sized cucumbers
  • 1/2 cup sour cream
  • 2 Tbsp cider vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper

Step 1

Peel cucumbers and slice thin. Layer cucumbers in a medium size bowl. Cover with 3 cups water, or enough to cover, and 1 1/2 tsps salt. Chill. Pour off salted water and rinse in clear water. Drain. Mix sour cream, vinegar, and sugar. Fold into cucumbers. Serve with a sprinkling of salt and pepper.
