  • 1 cup water
  • 1/2 cup fresh or frozen green peas
  • 1/4 cup plain low-fat yogurt
  • 1 1/2 teaspoons prepared horseradish
  • 1 1/2 teaspoons white vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups diced Red Delicious apple
  • 2 cups torn radicchio
  • 1/2 cup vertically sliced red onion
  • 1/3 cup diced bottled roasted red bell pepper

Bring water to a boil in a small saucepan. Add peas; cook 1 minute. Drain and set aside.

Combine yogurt, horseradish, vinegar, salt, and pepper in a large bowl; stir well. Add peas, apple, and remaining ingredients; toss well.
