Ingredients

  • Olive oil-flavored cooking spray

    cups thinly sliced button mushrooms

  • 1

    cup sliced portobello mushroom caps

  • 1

    cup thinly sliced shiitake mushroom caps

    tablespoons chopped fresh parsley

  • 1

    tablespoon minced shallots

    garlic cloves minced

    cup sherry vinegar

    tablespoon low-sodium soy sauce

    cups gourmet salad greens

    tablespoons chopped walnuts toasted

Directions

Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add mushrooms, parsley, shallots, and garlic; sauté 3 minutes or until mushrooms are tender. Combine vinegar, soy sauce, and honey; add to skillet. Remove mixture from heat; spoon mushrooms over salad greens. Sprinkle with walnuts. Serving Size: 2 cups greens, 1/3 cup mushrooms, and 1/2 tablespoon walnuts
