Roasted Pear Salad with Balsamic Reduction

Ingredients

  • 1 teaspoon canola oil
  • 1 teaspoon lemon juice
  • 2 Anjou pears
  • 1 teaspoon reduced Balsamic vinegar
  • 1 teaspoon dark brown sugar
  • 1/2 teaspoon cinnamon
  • arugula
  • goat cheese
  • pine nuts, toasted (or other, preferred nut)

Preparation

Step 1

Preheat the oven to 375°F. Brush a baking dish with the canola oil and set aside.
Add the lemon juice to a mixing bowl of water. Peel and halve the pears, scoop out the core, and dip in the lemon juice water to keep them from browning.
Place pears in baking dish, cut side up. Drizzle with balsamic reduction and sprinkle with cinnamon and brown sugar. Bake for 30 minutes.

Slice (or not) and serve over arugula. Sprinkle with goat cheese, toasted pine nuts or walnuts, or ???
