Ingredients

  • 1 1/2 tablespoons fresh lemon juice divided
  • 1/2 pound medium shrimp peeled
  • 2 tablespoons coarsely chopped walnuts
  • 1 cup diced Red Delicious apple
  • 1 cup diced celery
  • 3 tablespoons fat-free mayonnaise
  • 2 teaspoons prepared horseradish
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon salt
  • Dash pepper

Step 1

Bring 2 cups water and 1 tablespoon lemon juice to a boil in a medium saucepan. Add shrimp; cook over high heat 3 minutes or until done. Drain in a colander over a bowl, reserving 1 tablespoon cooking liquid. Rinse shrimp under cold water; drain.

Heat a nonstick skillet over medium heat. Add walnuts, and cook 2 minutes or until lightly toasted, stirring frequently. Combine shrimp, walnuts, apple, and celery in a bowl. Combine 1/2 tablespoon lemon juice, reserved cooking liquid, mayonnaise, and remaining ingredients in a bowl; stir well. Add mayonnaise mixture to shrimp mixture; toss well.

Serving Size: 1 1/2 cups
