Ingredients
- 1 small onion
- 1/2 cup chopped jalapeno pepper
- 1 can corn, drained
- 1 can black beans, drained
- 1 can fire roasted tomatoes
- 3/4 cup quinoa
- 1 cup vegetable broth
- 1 tsp. chili powder
- 1/2 tsp. cumin
Preparation
Step 1
Cook onion and jalapeno in a little olive oil until onion is translucent. Add remaining ingredients and cook for 20 minutes.
