Cake Crumb Cookies

Ingredients
- 1/2 cup unsalted butter softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla / lemon / or almond extract
- 1 ½ cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 ½ cup cake crumbs
- 1 cup chocolate chips / white chocolate chips / nuts / raisins if desired
Preparation
Step 1
Cream butter together with sugars. Mix in egg and extract.
In a separate bowl sift together dry ingredients. Mix in cake crumbs.
Add dry ingredients to butter and sugar mixing to combine. (Dough may appear a bit crumbly but will tighten up as it stands).
Add chocolate chips, nuts, or dried fruit if desired.
Chill the dough for 30 minutes, then scoop out onto a silicone lined baking sheet.
Bake in a 350°F preheated oven for 10-12 minutes.
Cooks Notes
Dough will appear a bit crumbly at first but after it rests the consistency changes to more of a cookie dough you would expect.
