Spicy Shrimp Over Fried Green Tomato

Ingredients

  • 1 small shallot peeled
  • 2 garlic cloves peeled
  • 1/8 cup red hot sauce
  • 3/4 cup canola oil
  • 1 teaspoon salt
  • 1 pinch freshly-ground white pepper
  • 1 Large shrimp peeled, deveined
  • 1 green tomato
  • 1/2 cup corn flour
  • 1/2 cup all-purpose flour
  • 2 tablespoons Old Bay seasoning
  • 1 cup buttermilk

Step 1

Place shallots, garlic, red hot sauce and vinegar in a blender and blend til smooth. Slowly add the oil to the mixture while it is still blending. Season to taste and refrigerate. Let shrimp marinate in this mixture for about a half hour.

Heat fryer oil to 350 degrees. Slice a green tomato about 1/2-inch thick. Mix the two flours and Old Bay seasoning together. Place the tomato in the flour mixture to completely coat ut. Next place it in the buttermilk and again back into the flour mixture. Place into the fryer and cook until golden brown.

Take out the shrimp and grill them until done (about 3 minutes each side). Place them on top of the fried green tomato and place this over a fresh tomato sauce. Serve immediately.
