    (¾-pound) pork tenderloins

    large Granny Smith apples each peeled and cut into 6 wedges


Preheat oven to 500º. Combine first 4 ingredients in a small bowl. Combine sweet potato, 1 teaspoon spice mixture, and 3 teaspoons oil; toss well. Trim fat from pork; rub remaining spice mixture over pork. Drizzle 1 teaspoon oil over pork. Arrange sweet potato in a single layer in a 15 × 10-inch jelly-roll pan coated with cooking spray; bake at 500º for 10 minutes. Add apples and pork; bake an additional 20 minutes or until meat thermometer registers 160º (slightly pink), turning sweet potato, apples, and pork after 10 minutes. Serving Size: 3 ounces pork, 3/4 cup sweet potato, and 4 apple wedges
