Ingredients

  • Whiskey Cream Base:
  • 4 T butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 8 cups beef broth
  • 2 russet potatoes, peeled and diced
  • 2 -3 cups beef, cooked and shredded
  • 1 "glug" Irish Whiskey
  • 4 T butter
  • 1 cap liquid smoke
  • meat drippings (optional)
  • salt and pepper to taste
  • 1/2 - 3/4 C heavy cream

Preparation

Step 1

Melt butter in stock pot. Sweat onion, celery, and carrots. Add beef broth, potatoes, and shredded beef. Bring to boil, reduce to simmer until potatoes are cooked.

In sautee pan, flame whiskey until it puts itself out. Add butter, cook to brown butter stage. Add ceam, salt, and pepper (season to taste) and cook unitl coats the back of the spoon. Add liquid smoke when desired consistency.

Add sauce to stock pot and let simmer for 5-10 minutes.
