NANCY'S SALAD

Ingredients

  • Dressing:
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • Salt & pepper, to taste
  • 3/4 cup olive oil
  • Salad:
  • 1/4 lb bacon, diced
  • 1 head of romaine
  • 1 head purple lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup coarsely grated Swiss cheese
  • 2/3 cup slivered almonds, toasted
  • 1/3 cup freshly grated Parmesan cheese
  • 1 cup croutons

Preparation

Step 1

In small bowl, combine, lemon juice, garlic clove and salt and pepper; whisk in oil. Let dressing stand, covered at room temperature for 3 hours.

In a skillet, saute the bacon until crisp and drain on paper towels. In a salad bowl, combine all but the croutons. Toss with dressing. Add croutons; toss again.
