Ingredients
- 3 c. graham cracker crumbs
- 3/4 c. unsalted butter
- 4 8-ounce packages cream cheese
- 1 1/2 c. sugar
- 2 tsp. vanilla extract
- 4 large eggs

Preheat oven to 300 degrees F. Prepare Crumb Crust: Mix cracker crumbs and butter in a bowl. Press mixture onto bottom and 2 1/4 inches up sides of a 9-inch springform pan. Set aside.

Prepare Cheesecake: In large bowl, with mixer at medium speed, beat cream cheese and sugar until very smooth. Add eggs and vanilla until very smooth.
Pour batter onto crust and bake until edges puff and center no longer moves when pan is shaken, about 1 hour 25 minutes. Transfer cheesecake to rack and cool completely. Cover and refrigerate at least 8 hours before serving.
