Amanda's Seafood Cheese Dip

Ingredients

  • 2 Large Yellow Onions, coarsely chopped
  • 4 Tbs Olive Oil
  • 2 10 oz cans Rotel, diced green chilies and tomatoes
  • 2 lbs block Velveeta cheese
  • 1 lb Cocktail Shrimp, cooked
  • cayenne pepper to taste

Preparation

Step 1

Cut Velveeta cheese into 1 inch cubes and place in a crock pot. While cheese is melting, heat olive oil in a large sauce pan. Add chopped yellow onions to pan and salute until tender. Once onions are tender add both cans of hotel and let mixture simmer.

Once cheese has melted add the mixture from the frying pan. Dash of cayenne pepper into cheese mixture and stir well. Combine shrimp with cheese mixture, stir and serve with dipping chips.
