Ingredients

  • 1 c white whole wheat flour
  • 1/2 tsp baking soda
  • 1 1/2 c rolled oats
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 2 egg whites
  • 3/4 c dark brown sugar
  • 1/4 canola oil
  • 1/4 drained crushed pineapple
  • 1/2 c fat free milk
  • 2 tsp vanilla
  • 1 c raisins
  • 1 c grated carrots
  • 1/2 c chopped walnuts

Preparation

Step 1

Heat oven to 375. Lightly coat 2 lg baking sheets with cooking spray.

In med bowl combine flour, baking soda, rolled oats, cinnamon,ginger, cloves and nutmeg.

In second bowl combine egg whites, brown sugar, oil, pineapple milk and vanilla.

Add the liquid ingrediants to the dry, stir to combine, then stir in raisins, carrots & nuts.

Drop by tablespoonful onto prepared cookie sheets, leaving 2 inches between. Bake for 12-15 min or until golden brown and slightly firm to touch.
