Chicken & Gnocchi Soup with TraderJoe's gnocchi
- 1 tablespoons extra virgin oil
- 4 tablespoons butter
- 6 tablespoons flour
- 1 pint half and half
- 1 pint milk
- 2 14 ounce cans of chicken broth or just some bouillon
- 1-2 lb chicken breasts, cooked and diced (you can use a rotisserie chicken)
- 1 package gnocchi gorgonzola flavored, or cook as instructed.

Cooking time 35mins
Melt butter and olive oil over medium heat. Add the flour and make a roux. Let the butter and flour mixture cook for about a minute before adding 1 pint of half and half and 1 pint of milk.
Cook chicken and place aside.
Cook gnocchi according to package directions.
Into the roux, add chicken. Once the mixture becomes thick, add the cooked or not cooked gnocchi, simmer until soup is heated through. Before serving season to taste by adding additional salt.
