Ingredients
- 1 lb Ground Chuck
- 1 Onion
- 1 Green Pepper (or any color)
- 1/2 cup salsa
- 1 can Pinto Beans
- 1 can Diced Chili-Style tomatoes
- 1/2 tsp salt
- 1/2 cup chopped fresh cilantro
- 2 cups shredded cheddar cheese
- 1 1/3 TBSP Baking Powder
- 1 tsp salt (for cornmeal mixture)
- 1 1/4 cup regular yellow cornmeal
- 1 cup milk
- 1 egg
Preparation
Step 1
Preheat oven to 400.
Brown first 3 ingredients in a large skillet, stirring until beef crumbles and is no longer pink. Drain and pat dry with paper towels. Return meat mixture to pan; stir in salsa, beans, tomatoes and salt. Simmer 5 minutes. Stir in cilantro. Spoon mixture into 9 x 13 pan and sprinkle with 1 cup of these
Whisk together corn meal, baking powder, salt, milk and egg in a medium bowl. Stir in remaining cup of cheese. Spread batter over beef mixture. Bake at 400 for 20 minutes or until lightly brown.
Note: original recipe calls for 1 1/3 cup of self rising yellow cornmeal mix. This can be made with 1 1/3 TBSP Baking Powder, 1 tsp salt, and 1 1/4 cup regular cornmeal.
