Spinach and Tomato Pasta

Ingredients

  • 2 pints grape tomatoes
  • 2 Tbsp olive oil
  • 1 (16 oz) pkg angel hair pasta
  • 1 (6 oz) pkg fresh baby spinach
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Preparation

Step 1

Preheat oven to 400º. Line a rimmed baking sheet with aluminum foil.

Toss together tomatoes and oil on prepared pan. Bake for 25 minutes or until tender.

Meanwhile, cook pasta according to package directions; drain, return to pot, and stir in spinach. Cover and let stand for 5 minutes. Add salt, pepper and roasted tomatoes, tossing to combine.
