Egg Bagels (AR)

Ingredients

  • 1 large egg (room temperature)
  • 2 tablespoons oil
  • 2 3/4 cups plus 2 tablespoons bread flour mix
  • 2 tablespoons sweet rice flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons xantnn gum
  • 3/4 teaspoon salt
  • 2/3 cup plus 2 tablespoons water, heated to 110°F
  • 1 tablespoon active dry yeast granules (not quick-rise)
  • Rice flour for board
  • 8 cups of water (for boiling bagels)
  • 1 tablespoon granulated sugar (for boiling bagels)
  • 1 egg, beaten
  • Sesame seeds, poppy seeds, caraway seeds, or coarse salt, bits of onion or garlic for topping

Preparation

Step 1

1) Lightly grease a large baking sheet with baking spray.

2) Mix egg and oil together in a small bowl and set aside.

3) Mix all dry ingredients in large bowl of elecric mixer. Quickly add warm water and egg and oil mixture to the bowl; mix until just blended. Scrape bowl and beaters, and then beat at high speed for 3 minutes.

4) Liberally spread rice flour over surfance of a wooden board and lightly flour hands. Use a spatula to move dough out onto the wooden board in a ball shape. Dough will be sticky. Roll dough around in the rice flour until it is lightly covered.

5) Divide dough in half; divide each half into 4 equal pieces with a small knife. Roll each with lightly floured hands to make 8 balls of dough. Poke a hole through the center of each ball using 1 finger and then expand it with 2 fingers until it is 2" wide. The bagels should be 3/4"-1" thick. Place on prepared baking sheet, cover with a light cloth, and let rise in a warm place (80°F is ideal) for 1-1 1/2 hours or until dough has slightly more than doubled in size.

6) Place rack in center of oven. Preheat oven to 425°F. Combine 8 cups of water and 1 tablespoon sugar in a large saucepan and bring to a rolling boil. Use a pancake turner to carefully move 3 bagels; boil for 2 minutes on each side. Remove the bagels with pancake turner and lay them on a paper towel. Pat dry and place bagels back on greased baking sheet. Repeat with remaining bagels (replace paper towels as needed so bagels do not stick).

7) Brush boiled bagels with beaten egg and sprinkle with seeds, salt, etc. Pat seeds gently into egg so they will stay on. Spray bagels lightly with cooking spray (it will give them a sheen). Bake in center of preheated oven for 10 minutes. Reduce oven temperature to 400°F for 15 minutes more, until bagels have a rich caramel color and are baked through. Remove bagels and cool on a rack. Serve warm.
