Ingredients
- 2 teaspoons vegetable oil
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh pineapple
- 1/4 cup chopped peeled mango
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green bell pepper
- 2 teaspoons minced seeded jalapeño pepper
- 2 teaspoons minced fresh thyme divided
- 1/2 cup tomato purée
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt divided
- 1/2 teaspoon black pepper
- 4 (6-ounce) grouper fillets

Preheat oven to 400º.
Heat oil in a medium saucepan over medium heat until hot. Add green onions, pineapple, mango, bell peppers, jalapeño, and 1 teaspoon thyme; sauté 2 minutes. Add tomato purée, lime juice, 1/4 teaspoon salt, and black pepper; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Remove from heat; keep warm.
Rub fish with 1 teaspoon thyme and 1/4 teaspoon salt. Place fish on a broiler pan coated with cooking spray. Spoon mango mixture evenly over fish. Bake at 400º for 20 minutes or until fish flakes easily when tested with a fork.
Serving Size: 5 ounces fish and 1/3 cup sauce
