Creamy Garlic Soup with Garlic and Walnut Crouton

Ingredients

  • MINCE:
  • 1 bulb garlic, peeled
  • MELT:
  • 2 Tbsp. unsalted butter
  • 1/2 tsp. freshly grated nutmeg
  • 1/4 tsp. white pepper
  • ADD:
  • 1/2 cup dry vermouth
  • 3 cups low-sodium chicken broth
  • 1 lb. Yukon gold potatoes, peeled and cubed
  • 2 dried bay leaves
  • 1 bulb garlic, roasted (see tip)
  • Fresh thyme sprigs
  • WHISK:
  • 1 cup heavy cream
  • Salt to taste
  • For Crouton:
  • BRUSH:
  • 12 slices French baguette, 1/4-inch thick
  • 2 Tbsp. olive oil, divided
  • Salt and black pepper
  • PURÉE:
  • 2 bulbs garlic, roasted
  • 1/4 cup walnuts, toasted
  • 1 tsp. packed fresh thyme
  • 1/4 tsp. cider vinegar
  • TOSS:
  • 3/4 cup finely diced sweet-tart apple (such as Honeycrisp)
  • 1 Tbsp. dry vermouth
  • Fresh thyme

Preparation

Step 1

Mince garlic in a food processor.

Melt butter in a pot over medium heat, add minced garlic, nutmeg, and pepper and sweat until garlic softens, 3 minutes.

Add vermouth and reduce by half, 5 minutes. Add broth, potatoes, bay leaves, roasted garlic, and thyme to pot and simmer until potatoes are very tender, 15 minutes. Discard bay leaves and thyme. Purée soup, in batches, in a blender until smooth.

Strain soup through a fine-mesh sieve; discard pulp. Return soup to pot over low heat.

Whisk in cream and heat soup through; season with salt.

For Crouton:
Preheat oven to 350°.

Brush 1 Tbsp. oil on one side of baguette slices; season with salt and pepper. Bake baguette on a baking sheet, oiled side up, until crisp, 10–12 minutes; let cool.

Purée roasted garlic, walnuts, remaining 1 Tbsp. oil, 1 tsp. thyme, and vinegar in a food processor until smooth; season with salt and pepper.

Toss apple with vermouth.

Spread roasted garlic mixture onto each crostini, then top each with 1 Tbsp. apple and garnish with thyme.
