Apple Pie Quick Bread with Streusel topping

  • 1/2 cup light brown sugar
  • 1/4 cup flour
  • 2 tsp cinnamon
  • 4 tbs cold unsalted butter, diced
  • 1/2 cup oats
  • Bread
  • 3 cups peeled, cored and chopped Honeycrisp apples (2-3 apples)
  • 1 tbs sugar
  • 1 tsp cinnamon
  • 3 cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt, ginger and nutmeg
  • 1/8 tsp ground cloves
  • 3/4 cup dried cranberries
  • 1 stick unsalted butter, melted and slightly cooled
  • 1/2 cup unsweetened apple sauce
  • 1/2 cup sour cream
  • 1/2 cup light brown sugar
  • 1/2 cup sugar
  • 3 egs
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven to 325°. Coat two loaf pans. For Streusel: Whisk together 1/2 cup brown sugar, 1/4 cup flour, 2 tsp cinnamon; cut in cold butter using a pastry blender until pea-sized. Mix oats into streusel mixture with your hands until thoroughly combined and clumps for; chill.
Bread: toss apples with 1 tbs sugar and 1 tsp cinnamon. Combine 3 cups flour, baking powder, 2 tsp cinnamon, baking soda, salt, ginger, nutmeg and cloves in a large bowl. Toss cranberries and apple mixture into flour mixture, then form a well in the center. Whisk together melted butter, applesauce, sour cream, 1/2 cup brown sugar and 1/2 cup white sugar, eggs and vanilla in a large measuring cup; pour into dry ingredients, stirring just until incorporated. Divide batter into the two pans. Bake loaves until a toothpick inserted into the center comes out clean 50-60 minutes. Transfer to wire rack and cook in pans 20 minutes. Remove from pan and cool completely.
