Cottage Cheese Egg Scramble

Ingredients

  • 6 eggs
  • 4 dollops cottage cheese
  • 1 tbsp olive oil
  • 2 tbsp butter or margarine
  • salt and pepper to taste

Preparation

Step 1

Warm a medium skillet to medium heat. Place olive oil and butter in pan. Add eggs to a bowl, add salt and pepper, mix with a fork and add to pan. Add the cottage cheese and with gently spatula move the eggs around incorporating the cottage cheese until done to your liking.
