Spicy Tropical Gazpacho

Ingredients

  • 1 cup tomato juice
  • 1 cup pineapple juice
  • 1/2 cup chopped peeled mango
  • 1/2 cup chopped peeled papaya
  • 1/2 cup chopped fresh pineapple
  • 1/2 cup chopped seeded peeled cucumber
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 2 tablespoons minced fresh cilantro
  • 1/4 teaspoon salt
  • 1/2 teaspoon hot sauce (1/2 to 1 teaspoon)

Preparation

Step 1

Combine all the ingredients in a food processor or blender, and pulse 4 times or until combined. Cover and chill.

Serving Size: 1 cup
