Ingredients
- 3 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon ground cumin
- 2 (16-ounce) cans navy beans drained
- 2 garlic cloves chopped
- 1 jalapeño pepper seeded and chopped
- 3/4 cup minced red bell pepper
- 3/4 cup minced fresh cilantro
- 1/4 cup minced green onions
- 1/2 teaspoon salt
Preparation
Step 1
Place the first 6 ingredients in a food processor, and pulse 2 times or until well-blended. Pour bean mixture into a large bowl; stir in bell pepper and remaining ingredients.
Serving Size: 1 tablespoon
