Meatloaf - Meatballs

Use Meatloaf mixture for Spaghetti and Meatballs

Ingredients

  • Meatballs:
  • 2 pounds lean ground beef
  • 1 cup bread crumbs
  • 3 tablespoons chopped fresh flat leaf parsley
  • 1 1/2 medium onions, chopped
  • 2 medium carrots, shredded
  • 2 large eggs
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Soy sauce
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound of meatloaf mix
  • 2 garlic cloves, minced or pressed
  • 1 tablespoon dried Oregano

Preparation

Step 1

Preheat oven to 400 degrees
In a large bowl, combine all ingredients until well mixed.
Divide into 4 equal portions.
Place in individual loaf pans.
Top with favorite barbecue or tomato sauce.
Bake at 400 degrees for about 15 minutes or until internal temperature reaches 165 degrees.

Mixture can be stored in an airtight container in the refrigerator for one to two days or freeze.

Meatballs:

Combine the meatloaf mix, garlic and oregano.
Divide the mix into 12 portions and shape into meatballs.
Arrange in lightly greased baking dish large enough to hold them without touching.
Bake meatballs for 25 minutes, until cooked through.
