Apple and Cinnamon Layer cake with Coconut Walnut Streusel

Ingredients
- Apple Cinnamon Compote:
- 4 small apples, peeled and sliced
- 1/3 cup honey or rice syrup
- 1/2 cup sultanas
- 1-2 tsp ground cinnamon
- 2 tbs water
- Approx 1/8th tsp stevia powder
- Cake:
- 1 1/2 cup oat flour (ground rolled oats)
- 1/4 cup coconut flour or almond meal
- 1 tsp bi-carb soda
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla powder
- 1/2 cup dried coconut
- 1/2 cup sultanas or dates
- 1/3 cup honey or rice syrup
- 2 tbs psyllium egg or 2 eggs of you'd prefer
- Approx 1/8th tsp stevia powder
- Psyllium Egg – To 1 tsp psyllium add 60ml hot water and stir vigorously to ensure there are no lumps. Allow to sit for 20 minutes so it can thicken.
- Streusel Topping:
- 3 tbs dried coconut shreds or similar
- 3 tbs walnuts
- 1 tbs oat flour – I didn’t add this but it would help to bind the streusel so it’s not so crumbly and falls off the cake!!
- 1 1/2 tbs honey or rice syrup
- 1/2 tbs coconut oil
- 1 tsp ground cinnamon
Preparation
Step 1
Make the psyllium eggs first then let it sit on the bench until required.
Compote:
Add all ingredients to a medium pot and simmer on low until the apples and sultanas are soft and it becomes thick and jammy.
Once cooked turn off the heat and allow to cool while you prepare the cake.
Cake:
Preheat oven to 160 degrees Celsius and grease or line a loaf pan with non stick baking paper.
Add the oat flour, coconut flour or almond meal with the baking powder, bi-carb, cinnamon and vanilla then stir to combine and remove lumps.
Add the rest of the ingredients to a small blender and blend until thick. The dried fruit is your sweetener so you want it to be pureed.
Add the pureed mixture to the dry ingredients in the bowl them quickly fold through making sure not to over mix it.
Spoon half of the cake mixture into the bottom of the loaf pan then spread half of the compote on top.
Spread the remaining cake mix over the fruit compote then the rest of the compote on top of the cake mix.
Streusel:
Quickly add the streusel ingredients to the blender and pulse until course and sticky, you want to make sure it has nice texture so don't over do it.
Spread the streusel crumble over the top of the fruit compote then carefully pat it down lightly making sure not to overdo it and make it to hard.
Place into the preheated oven and bake for approximately 45-50 minutes.
Allow to cool before removing and slicing.
