Ingredients

  • For the Cookies
  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 1 1/4 cups brown sugar
  • 2 Tablespoons milk
  • 2 teaspoons vanilla
  • 1 egg
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons apple pie spice
  • For the Filling
  • 1 - 3.4 ounce box instant vanilla pudding
  • 3/4 cup milk
  • 1 - 8 ounce container Cool Whip, thawed
  • 1 teaspoon apple pie spice
  • 2 1/4 cups diced Crunch Pak apples, divided
  • 2 1/4 cups diced caramel cookie candy bars, divided

Preparation

Step 1

Cream together the butter, shortening, and sugar. Add the milk, vanilla, and egg and beat again.
Stir together the flour, salt, baking soda, and apple pie spice. Slowly add to the butter mixture until combined. Roll into 24 even cookie dough balls.
Place in a greased mini tart pan or cupcake pan. Bake at 375 degrees for 11-12 minutes. Do not over bake.
Remove from the oven and let cool in the pan for 2 minutes. Use a tart shaper or back of a spoon to press in the center of the cookies. Gently remove and place on a wire rack to cool completely.
Whisk together the pudding mix and milk. Fold in the Cool Whip and apple pie spice. Stir in the 2 cups apples and 2 cups candy bars. Spoon into the cooled cookie cups. Top with extra candy bars and apples. Store in a sealed container in the refrigerator. Makes 24 cookie cups.
