Chicken Taquitos

Ingredients

  • 2 1/4 pounds chicken breast
  • 3 Tbsps. vegetable oil
  • 6 oz. cream cheese, softened
  • 3/8 cup green salsa
  • 1 1/2 Tbsps. fresh lime juice
  • 3/4 tsp. ground cumin
  • 1 1/2 tsp. chili powder
  • 3/4 tsp. onion powder
  • 3 cloves minced garlic
  • 3 Tbsps. sliced green onions
  • 1 1/2 cup shredded Mexican blend cheese
  • 15 small flour tortillas

Preparation

Step 1

1. Saute chicken in oil until cooked through, then shred meat.

2. In a large bowl, mix the cream cheese, salsa, lime juice, cumin, chili powder, onion powder, and garlic. Once combined, stir in green onions. Add the chicken and cheese; mix thoroughly.

3. Heat tortillas in microwave according to package directions to soften them.

4. Spoon 3 Tbsps. chicken mixture on lower third of tortilla and roll tightly. Place seam side down on baking sheet sprayed with cooking spray. Repeat with remaining tortillas.

5. Spray tops lightly with cooking spray and sprinkle with salt. Bake at 425 Degrees F for 20 minutes or until crisp and golden.
