Avgolemon Soup

To be added to a hot pot of chicken soup.

Ingredients

  • 2 eggs separated
  • juice of one lemon
  • hot pot of chicken soup

Preparation

Step 1

Beat 2 egg whites until foamy.
Gradually add (1 at a time) 2 egg yolks.
Add gradually the juice of one lemon, stirring constantly.

Add hot soup (5-6 serving spoonfuls) to above mixture gradually.

Then add this mixture to the pot of soup.
It helps to have an assitant.
