Mole Blanco

This recipe is courtesy of chefs Jaime and Ramiro Arvizu, owners of La Casita Mexicana in Bell, CA (Los Angeles). I eat here all the time and their food is some of the very best Mexican food in LA. I have also had this Mole Blanco and it is awesome!!!

Ingredients

  • 3 Tbsp oil
  • 1 cup golden raisins OR sultana
  • 1 cup blanched almonds
  • 1 cup peanuts
  • 1 cup pumpkin seeds
  • 1 cup sesame seeds
  • 2 hot peppers, seeded and sliced. Yellow peppers work best
  • 2 plantains fried
  • 1 slice white bread, toasted and crumbled
  • 1 onion, fried
  • 1 garlic clove
  • 1 cup white chocolate, make sure it contains cocoa butter
  • 10 cups chicken broth
  • salt and pepper, to taste

Preparation

Step 1

1. Fry the first 11 ingredients together, until golden.
2. Remove from the pan and place in a blender or food processor with a little bit of chicken stock. Process until smooth and return to pan
3. Add the remaining chicken broth and the white chocolate and simmer for 1/2 an hour.
4. Season to taste with salt and pepper
5. Once it has reached the desired thickness, it is ready for dressing any meat you would like. Chicken and Tender Pork are both delicious with this mole
