Ingredients

  • 2 cups fresh blueberries
  • 1 cup water
  • 1/2 cup sugar
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp grated orange zest
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup 2% milk
  • Light Whipped Cream (optional)

Preparation

Step 1

In a medium skillet, combine blueberries, water and sugar. Cook over medium heat until mixture starts to bubble, stirring constantly. Reduce heat.
In a medium bowl, mix together the flour, baking powder, orange zest, nutmeg and salt. Add milk; stir until just moistened.
With spoon, drop batter on top of simmering berry mixture. Once all batter is on top, cover skillet and simmer until dumplings are puffed, about 10 to 15 minutes.
Serve with a dollop of whipped cream, if using.
