Ingredients
- Sandwich
- 1 corned beef brisket (3-4 lbs)
- rye bread
- sauerkraut
- swiss cheese
- Thousand Island dressing
- mustard (optional)
- Thousand Island Dressing
- 1 cup mayo
- 1/2 cup ketchup
- 1/4 cup pickle relish
- 1 T. lemon juice
- 1 hard boiled egg, chpd fine (optional)

Preparation
Step 1
Put corned beef in crockpot in the morning, cover with water. Cook on low for 6-8 hours. When done take out and slice against the grain.
Construct sandwiches:
Butter outside of both pieces of bread, put in non-stick pan, then layer swiss cheese, corned beef and sauerkraut. Flip to other side until heated through and cheese is melted.
Serve with Thousand Island and mustard (optional)
