Ingredients
- 880 g sugared yolks
- 500 g sugar
- 360 g cocoa
- 1320 g egg whites
- 700 g granulated sugar
Preparation
Step 1
Whip yolks and sugar until pale (ribbon stage)
Add sifted cocoa to yolks and mix well.
Whip whites and sugar to soft peaks and fold into chocolate mixture.
Spread onto greased paper and bake at 380F for 20 minutes.
Yield: 5 sheet pans
