Chocolate Truffle Mousse

Ingredients

  • 1200 g water
  • 600 g glucose
  • 48 gelatin leaves
  • 4 K chocolate
  • 8 K heavy cream

Preparation

Step 1

Boil water and glucose.

Bloom gelatin and add to water

Pour water mixture over chocolate and mix to melt

Whip cream to soft peaks and fold chocolate into cream.
