Ricotta disaronno cookies

Ingredients

  • 2 sticks of butter
  • 2 cups sugar
  • 1/2 tsp salt
  • 16 oz ricotta
  • 2 eggs
  • 2 tsp vanilla
  • 5 tsp Disaronno (add more if you like)
  • 4 cups flour
  • 3 TB baking powder

Preparation

Step 1

1)Cream butter and sugar.
2) Add eggs, ricotta, vanilla, and Disaronno.
3) Add flour, baking powder and salt. Dough will be moist.
4) Drop teaspoon of dough on baking sheet.
5) Bake at 350 for 10 minutes until edges are lightly browned.
6) Cool, then frost.
7) Icing: 2 cups powdered sugar, 1 tsp vanilla, juice and zest from one lemon, ¼ to ½ cup of milk.
8) Mix well and dip cookies into it and let dry.
