German Pancake with Berries and Yogurt

Ingredients
- 3 large eggs
- 1/3 cup sifted all purpose flour
- 1/3 cup milk
- 1/4 tsp salt
- 1 TBS vegetable shortening
- 1/2 cup vanilla yogurt
- confectioners sugar
- 2 1/2 cups mixed fresh berries
- 1 large strawberry with stem for garnish

Preparation
Step 1
heat oven to 450
in food processor with chopping blade or blender, process eggs until frothy
add flour, milk, and salt
process 5 sec.
scrape sides and process smooth
prepare skillet
place 10 in. cast iron skillet in oven 5 min.
remove and add shortening, brush sides
pulse batter, then pour into skillet
bake 12 - 15 in. until puffed and light brown
cool skillet on wire rack 5 min.
slip onto serving plate
spread yogurt in bottom of pancake
sprinkle with confectioners sugar
fill with berries
garnish with fanned strawberry
