Ingredients
- 4 TBL butter
- 5 oz smoked salmon
- 1/4 C diced red onion
- 1 TBL vodka
- 1 C heavy cream
- 1 LB penne or other short pasta
- 1 C frozen peas, thawed
- 2 egg yolks, beaten
- salt
- freshly ground black pepper
Preparation
Step 1
melt butter in lg. skillet over med-low heat
add salmon & onion & cook until onion just softens & salmon barely
changes color
add vodka, turn up heat & touch surface w/ lit match
when flames subside, pour in cream
bring to boil & cook until reduced by half, abt. 10 min.
meanwhile cook pasta in rapidly boiling salted water
drain & place in serving bowl
stir peas into reduced sauce
remove from heat & pour over pasta
add egg yolks, S & P
toss well to combine & evenly coat
serve hot
